For the flavours, the attack opens on notes of raspberry, Morello cherry and blackcurrant, with peppery touches and a hint of chocolate. The structure is silky, with no aggressive tannins, giving way to delicate roundness supported by a mineral freshness.
Cornalin – Michel Henri
Cornalin is an ancestral Valais grape variety — a true legend. It is the most delicate and demanding variety to cultivate. For years, our clients asked us to craft a Cornalin, and now the wish has finally come true. This wine, with aromas of blackberry, cherry, dark fruits, plum and blackcurrant, lifted by a subtle chocolatey note, has been vinified in stainless steel to preserve its freshness and gourmand character. On the palate, it is delicate and round, with refreshing acidity that makes every sip a genuine moment of pleasure.

Gastronomy
This Cornalin pairs wonderfully with roasted meats, spiced roast duck, or small game such as pheasant or hare in sauce. These dishes beautifully highlight its dark‑fruit notes and refined delicacy.
